Motoho is a fermented, non-alcoholic sorghum beverage or porridge manufactured by the Sotho people of South Africa. It is readily consumed daily or weekly by the entire family, but little information is available with regards to the microorganisms responsible for the fermentation of motoho.
Boil water on the side, then add the maize meal paste/slurry to the boiling water, stirring continuously until the mixture is smooth and lump-free. Then simmer this mixture for about 20 minutes to allow the starch to cook through. Once the porridge drink is cooked, remove it from the heat and set it aside until luke-warm.
