Ingredients 2 kg pork ribs (membrane removed)
1 tbsp salt
1/2 tsp black pepper
1 tsp cumin
1 tbsp paprika
1 cup bbq sauce
2 tbsp oil
3 tbsp honey
BBQ SAUCE
2 tbsp oil
Half small onion grated
2 cloves garlic paste
1 cup tomato sauce
1/2 cup apple cider vinegar/any vinegar
1/4 cup brown sugar
2 tbsp Worcestershire sauce
1 tbsp lemon juice
Salt and pepper
1 tbsp smoked paprika
1 tsp cayenne pepper ( heat oil in a saucepan and sauté onion and garlic, then add the rest of the ingredients, simmer for 10 minutes until slightly thickened)
Method Preheat oven to 180 degrees Mix together salt, pepper, cumin and paprika Rub the mixture all over the ribs Place the ribs in a roasting tray, over with tin foil and bake for 2 hours Remove the oven , then remove the foil Mix together 1 cup of bbq sauce, 2 tbsp oil and honey Pour sauce over the ribs making sure ribs are covered with sauce Place in the oven and continue to bake for 20 to 30 minutes NB Keep basting the ribs with the sauce until the ribs are sticky and juicy Serve.
