Easy Yoghurt Muffins Recipe
625g of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
125 ml of sugar
250ml of milk
200g of yoghurt (any flavour)
1 cup melted butter
1 tablespoon of vanilla essence
Preheat the oven to 180 degrees Celsius
Sieve together flour, baking powder, and salt.
In a separate bowl whisk together butter, sugar, and eggs. Add milk and yoghurt and stir thoroughly. Stir in dry ingredients until all the ingredients are thoroughly combined. Add vanilla essence.
Grease muffin tray with butter
Pour batter 3/4 full, and bake for about 20 minutes at 180 degrees Celsius oven. Once done, take them out and leave them outside for about 10 minutes to cool down.
Serve them warm or cold with grated cheese or jam or marmalade and rooibos tea
