Delicious cheesecake recipe

Chinese Cotton Cheesecake 


Ingredients:

60gm butter

110ml full cream milk

250gm cream cheese 

6 egg yolks

50gm cake flour/superfine flour

20gm corn starch


6 egg white

85gm fine granulated sugar

1/2 tbsp lemon juice 


Baking pan: 8” loose bottom pan 


Method:

1. Preheat oven to 150dC. Line the bottom and side of the pan with parchment paper (side lining is optional). 


2. Using bain marie method, heat a pan/pot with water until it boils, then lower heat. Place another pan over it, add in milk and cream cheese, use a whisk to stir until smooth. Then add in butter, continue to whisk until smooth. Remove from heat. Add in egg yolk, one at a time, whisking well after each addition. Then sift in cake flour and corn starch, whisk well until fully incorporated and smooth. Set aside.


3. Prepare to whisk egg white in the mixing bowl of a stand mixer, start at medium speed and whisk until bubbly. Add in lemon juice and turn to high speed, add sugar in 3 batches, let it whisk until soft peak. 


4. Add in 1/3 egg meringue into cream cheese mixture, fold gently using a spatula. Continue with another 1/3 and so on, fold until just combined and there are no more visible white streaks of meringue. Do not over-mixed. Pour batter into prepared pan. Give it a few knocks on table top to release air bubbles. Place this baking pan into another slightly larger pan. 


5. Meanwhile, pour about 2cm of hot water into the lowest rack of the oven (for water-bath baking method). Then place the baking pan in pan on the rack of hot water. 


6. Bake at 150dC for 30 minutes. Then lower oven temperature to 120dC and continue to bake for 30 minutes. After baking is done, turn off the oven. Leave the cheesecake in the oven for another 30 minutes (the reason being to minimise rapid shrinkage of cheesecake, but there will definitely be some slight shrinkage of about 1/2”). 


7. Remove from oven and let it continue to cool completely. Keep refrigerated for 3-4 hours before slicing.
