This Magic Custard Cake, I'm telling you, is truly magical. Several times while cooking this, I was on the verge of giving up and tossing the concoction into the trash. When I stared at the dubious cake mixture in front of me after seeing all the beautiful photographs of this three-layered gooey custard cake online, I had little confidence that it would turn out.
▢4 eggs – room temperature
▢¾ cup of caster sugar
▢125 grams of melted butter ½ cup
▢1 teaspoon of vanilla extract
▢¾ cup of plain flour – sifted
▢2 cups of milk – lukewarm 500 mls
▢¼ cup of icing sugar to decorate.
Preheat the oven to 170 degrees Fahrenheit and line a 20cm square cake tin with baking paper, leaving plenty of excess hanging over the sides.
Separate your eggs and whip the egg whites with an electric mixer until stiff peaks form in a CLEAN and DRY bowl - this is critical. Set the egg whites aside until you're ready to use them.
In a large mixing basin, whisk together the egg yolks and caster sugar with an electric mixer until well blended and light and fluffy.
Gradually add the melted butter and vanilla extract to the electric mixer on low speed before adding the sifted flour a few spoonfuls at a time.
Gradually add the lukewarm milk and beat on low-medium speed until all of the ingredients are combined.
Gently incorporate the egg whites into the mixture in the mixing basin.
Pour the batter into your prepared cake tin and bake for 35 minutes, or until a golden crust forms on top of the cake.
NOTE: Depending on the temperature of your components, your baking time will vary. It's possible that some people will need to cook their cakes for up to an hour.
This cake is baked in a 20cm square baking tray; you can use another size tin, but the cooking time will be different.
The mixture will appear lumpy, and you may believe it will not work out - persevere because the end result will be worh it!
