SAUCY MINCE WITH BAKED EGGS
500g Lean beef Mince
2 medium jalapeño peppers, finely chopped
2 tbs minced garlic
2 tbs smoked paprika
1 tbs ground cumin
1 can chopped tomato
6 large Nulaid eggs
Salt & black pepper to taste
6 slices toast
Fresh parsley leaves
Preheat the oven to 200°C. Heat a large ovenproof pan over medium heat until hot.
Add mince, jalapeño peppers, garlic, paprika and cumin;
cook 8 to 10 minutes, breaking beef into small crumbles and stirring occasionally.
Season and stir in tomato; continue to cook 3 to 5 minutes or until sauce is slightly reduced.
Make six indentations into sauce with the back of a spoon and break one egg into each.
Place pan in oven and bake, uncovered, 16 to 17 minutes
or until egg whites are completely set and yolks begin to thicken but are not hard.
Serve on toast & garnish with parsley
