Beef and Cheese Chimichanga
500 g ground beef.
3 cans of tomato sauce.
1 diced onion.
1 can of refried beans.
1 teaspoon chili powder.
1 teaspoon cumin.
2 minced garlic cloves.
1 minced jalapeno pepper.
2 cups cheddar cheese grated
salt and pepper to taste.
Brown ground beef in a nonstick skillet and breaking it apart with a wooden spoon as it cooks.
in a large skillet, combine diced onion, tomato sauce, garlic, chili, salt, pepper, and cumin, and cook for 10 minutes, stirring constantly.
On each tortilla, spoon about 1/3 cup of this cooked mixture, fold in both sides, and roll-up.
Using a deep fat fryer, heat vegetable oil, and fry the chimichangas until browned, remove them and sprinkle with cheese.
Serve it with the sauce.
Just looking at it makes my heart beat so fast. I can only imagine what it will do to my diabetes but I'll have to check to make sure I'm right to get on it.yummy meal to enjoy with family.
