Chicken kebabs are a great way to turn a funky mix to your traditional way of cooking. Chicken kebabs and baked potatoes
500g chicken breast (cubes)
2 tablespoons of mayonnaise
1 tablespoon of chicken seasoning
1 tablespoon of garlic pepper seasoning
1 teaspoon of paprika
1 medium green pepper
1 medium red pepper
1 medium yellow pepper
Step1-Rinse chicken, bring it to boil then and add salt. This will allow the chicken to cook quicker when it is put on kebabs. Set the chicken on medium heat and boil for 30 minutes. Once there is no redness showing on the chicken even from inside set it aside.
Step 2- Using a medium sized bowl add mayo and all seasoning/spices. Mix ingredients well then add chicken let it rest for 1 hour. Allowing it to rest makes the chicken to marinate well and absorb all the flavours from the salt.
Step 3-Take the marinated chicken on skewers along with pieces of red pepper, green pepper,yellow pepper and onion. Place the skewers on a hot grill, and allow to cook for 14 minutes or until chicken is cooked through.
Clean and cut out potatoes into wedges.
Sprinkle with vegetable seasoning,paprika and garlic pepper seasoning.
Bake in the oven or air fryer for 20-25 minutes. Once the wedges change colour and becomes golden brown you may then proceed with your cheese which is optional.
Serve chicken kebabs with potato wedges.
