3 1/2 pounds butternut squash
1 tablespoon avocado oil
1 small yellow onion (halved)
1 garlic clove (peeled)
1/2 tablespoon maple syrup
Preheat the oven
Cut the squash into large cubes, add two teaspoon cooking oil
Roast for 30 minutes, turning once during cooking, until golden and soft.
While the butternut squash cooks, melt the butter with the remaining 1 tbsp of olive oil in a large saucepan, then add the onions, garlic clove, and three-quarters of the chillies. Cook for about 30 minutes, then let the soup cool down before you serve it with bread.
