Prego Chicken served with Tzatziki, Mango salad 🥗and chips 🍟


Prego Chicken


Ingredients 


1 full Chicken

2 tsp paprika

2 tsp BBQ spice

Salt to taste

1 tsp Cayenne pepper 

100g butter

1 cup Nandos Prego sauce 


Method 

Add all the spices and salt together to make a spice Rub. Cut 50g pieces of butter and place under the skin of Chicken. Rub spice Rub over the entire chicken.

Oven Roast 220°c for 50 to 60 minutes or Airfry for 35 to 40 minutes. Halfway through the cooking process melt the balance of the butter and brush over chicken.

Remove and pour sauce over the chicken and allow to rest for 5 minutes before cutting. This allows the juices to stay in the chicken.


Tzatziki

1 cup plain yogurt

½ cucumber peeled

Salt to taste

½ tsp paprika 

1 Tbs dill

Juice of a half lemon

Drizzle of olive oil


Method

Add plain yogurt to bowl. Grate cucumber and add to yogurt. Add salt, paprika, dill and lemon juice. Mix until well incorporated. Drizzle with olive oil and serve.
