Berry Breakfast Muffins

Perfect for the Holiday weekend dear cookers

A perfect weekend bake; soft, fruity sweet, and delicious. These berry muffins are a great, healthy breakfast. 

Happy holidays let us put smiles in our families faces with this yummy berry breakfast recipe 😋and method 😋

Ingredients

125ml (½ cup) Oat flour 

125ml (½ cup) Almond flour 

5ml (1 tsp) baking powder 

90ml (6 Tbsp) coconut sugar or 15ml (1 Tbsp) honey

Pinch of Salt 

125ml (½ cup) milk of choice

60ml (1/4 cup) coconut oil, melted

5ml (1 tsp) vanilla extract

180ml (¾ cup) frozen blueberries or mixed berries 


Directions

Combine all ingredients into a mixing bowl and mix well with a fork. Place in a muffin pan and bake at 180°C for about 12-15 minutes or until cooked.


Note: Substitute normal flour if you like - and castor sugar in place of coconut sugar.

Or keep it gluten free.
