Mogodu (tripe) and chive mash potatoe recipe

How To Cook Mogodu (Tripe recipe) Mogodu is best served when hot and it can be served with pap, samp and dombolo even.


1kg cleaned sheep tripe

3 cups of beef stock

1 tablespoon of salt

1 onion that is roughly chopped

2 pieces of Star Anise

4 All Spice berries

4 pods of Cardamom

Ground black pepper

1/2 teaspoon ground coriander

1 sprig thyme that is chopped

1 sprig of rosemary, chopped Clean your tripe until you are sure that it is clean.

Method:Cut it into pieces that are suitable in any shape. Put all the tripe into the pot and all the ingridients. Make sure that your cube covers the pot for salt taste. Boil it to cook for 2 hours. Keep on tasting it and checking if it is well cooked.

Chive Potatoe Mash


Preparation Time 5minutes

15 minutes Cooking Time:

Ingredients 3 cups boiled potatoes, mashed 4 tablespoons chives, finely chopped 4 tablespoons heavy cream Salt and pepper to taste

Method Combine all the ingredients in a bowl and mix.
