You'll never buy DIDDLE DADDLE popcorn again once you try my recipe

This recipe came about a few years ago when I was craving Diddle Daddles and needed to make them. I was stumped, trying to figure out how to get the flavour as close as possible to how the caramel popcorn tastes.

I decided to make a few attempts and I got the recipe as close as possible to the real thing. You won't need many ingredients to make this but it will be worth it!


You need is popcorn seeds, sugar and honey to make caramel popcorn so good you want to slap your mom! (Disclaimer: Please do not follow through with that)

Ingredients:


■ 1 CUP SUGAR (can be brown)

■ 60ML WATER

■ 30ML HONEY

■ 1 TEASPOON BICARBONATE OF SODA

■ 4/5 CUPS OF POPPED POPCORN

■ SALT TO TASTE

Utensils:

Mixing bowl (any large bowl will do) Wooden spoon (long handle) Pot and Glass with iced water.

Method:


1. Pop the popcorn and salt it once it is done and leave aside to cool.


2. With your stove still on medium, add the water, sugar and honey and stir until it is dissolved.


3. Once the sugar has dissolved; DO NOT STIR

This is very important. Do not stir the caramel. You may be tempted to, but do not. You interrupt the process.


4. You need to watch and wait.

This part may be a little boring but you cannot leave the caramel alone. You must wait until the colour is like toffee. It is important that the colour be dark enough. If it too light the flavour won't be as strong.


5. Once the caramel is the right colour.

This part can make or break your caramel. You can test whether or not the caramel is ready by dropping a little bit into some ice water if it solidifies, that means the caramel is ready.


6. Take the caramel off the heat and add bicarbonate of soda

This part is very fast. You must be ready and safe because caramel can give you intense burns. Once the bicarb is in, stir once or twice the pour onto the popcorn


7. Stir the caramel into the popcorn as quickly as you can and make sure you coat it thoroughly then lay it on a tray and let it cool.


8. Enjoy!!!


Store in an airtight container if you are not planning on eating the entire thing like my family and I did. (It won't be easy)
